Grilled Goat Skewers
Sate kambing, or grilled goat skewers, is a favorite lunch dish almost all ages in Tegal, from youngest to oldest. Although this dish is also famous in some other places, in Tegal, it is well-known because of the seasoning and use of young goat meat, usually goat bellow 3 or 5 months old. Due to using young goats, the meat is tender and doesn’t smell bad.
This skewer is almost like other Indonesian skewers; the meat is chopped into pieces and stabbed into the bamboo skewer sticks, then grilled on the charcoal that has been heated. The dipping season sauce is made from sweet soy sauce, grounded chili peppers, chopped shallots, and tomatoes. This skewer is usually sold in packs of 20 sticks, with a price range of Rp. 80,000.00* to Rp. 150,000.00*.

Sauto
Sauto is an acronym of “soto” and "tauco," which is soto (Indonesian traditional soup) from Tegal. As the name suggests, this soto uses tauco, which is a preserved fermented soybean. The tauco is combined with the soto and results in a savory and a little bit sour taste. Soto contains rice, shredded chicken, or meat, but in some stalls, they use fried tripe, complete with bean sprouts, green onions, and fried shallots. Sauto used to serve lunch, but there are some stalls open until night. A bowl of sauto can be priced in the range of Rp. 8,000,00* – Rp. 30,000.00*.

Sayur Asem
Sayur asem is an Indonesian vegetable soup that is used for lunch and originated in Betawi, or Jakarta. However, sayur asem is already well-known in some regions and has a lot of variations based on the region. In Tegal, sayur asem is using bilimbi instead of tamarind (although in some stalls using tamarind), which is grounded with shallots so it will create a white, cloudy soup.
